Enzymes have an optimal temperature range where they function most efficiently. Beyond this range, especially at higher temperatures, the enzyme's three-dimensional structure can unfold in a process called denaturation. This structural change disrupts the active site and inhibits the enzyme's ability to catalyze reactions.
